Recipe: Buttery Miso Ramen Noodles

Well, friends.  It’s been a roller coaster of an Election Week.  Over the past few days, my usual feelings of inspiration have been replaced with feelings of stress and anxiety, which is why I’ve been off the blog since the votes started rolling in on Tuesday.  But, with things starting to look up for Joe Biden and with a nice, inspirational trip out to the farm to pick up a fresh CSA box, I’m starting to feel a little better, and my desire to cook fun meals has started to come back.

Last night, I made a big batch of kimchi, along with a nice dinner of lettuce wraps with a ground pork filling (recipe for that coming soon!).  As a side dish, I made something that sounded super comforting – buttery, miso ramen noodles.  This dish is seriously as simple as boiling some ramen noodles in water, and tossing the drained, hot noodles into some butter and miso.  The resulting dish was exactly what I needed during these stressful times – creamy, carby, umami, and buttery.  So utterly perfect and simple, I hope you make these too if you’re feeling the election week stress.

Recipe down below, along with some photos!  We shared this as a side for two people, but I could have easily polished this off myself as a big, comforting dinner.  Chris also added black pepper to his and said that it gave this dish a cacio e pepe vibe – so feel free to go that route if you want a little extra spice in your life!

Buttery Miso Ramen Noodles:

Ingredients:

  • 1 package of uncooked ramen noodles
  • 2 tbsp butter
  • 1 tbsp miso paste

Method:

  1. Bring a large pot of water to a full boil.  Once boiling, add the ramen noodles to the pot, and stir to allow the noodles to separate.  Boil until noodles are fully cooked, then drain the noodles in the sink using a colander.
  2. Add the drained noodles back to the pot or into a serving dish.  While still very hot, add the butter and miso, stir to combine.  Using the back of a spoon, break the miso into smaller pieces to allow it all to incorporate fully.  Eventually, the noodles should be evenly coated with an emulsified mixture of butter and miso.
  3. Serve warm and enjoy!
