We are now in full summer mode, and here in the desert of California, it’s getting very hot. We’ve reached the point of summer where we are buying melons in bulk. Chris is a huge fan of melons, plus they make an awesome low-calorie late night snack!
Our Costco watermelons left over from our evening TV time were put to very good use in this super refreshing smoothie that I made this morning. Starting with my usual coconut water base, I threw in lots of fresh watermelon, a handful of frozen strawberries, and some fresh basil leaves, and blended it all together. The result was a drink that was perfectly hydrating, delightfully pink, and sweet with a little hint of herbaceousness.
I had this as a breakfast smoothie, which was a delightful start to the day but honestly was not as filling as I would normally like. This would be an awesome afternoon refresher, and would even be great as a base for a cocktail! This recipe is the perfect summer cooler, so bring out your blender and give it a try!

Watermelon Juice with Strawberries and Basil
- 1 11 oz container of coconut water
- 1 ½ cups watermelon cubes
- ½ cup strawberries (fresh or frozen)
- 6-8 leaves of fresh basil
- Add all ingredients to a blender, and blend on high until completely smooth, about 1 minute.
- Pour into two glasses and enjoy!
