Yes friends – I am still powering through my lemon harvest. Out of the four that remained after the main harvest, two I used in a lemon ice cream recipe that turned out to be delightful! I followed a recipe from Food 52 (click on the link to access it!) for a fresh, no churn lemon ice cream. Since I have an ice cream machine, I went ahead and churned my batch, which resulted in a light, fresh, lemony ice cream that is super refreshing and creamy. I definitely recommend making this recipe if life gives you lemons!
