A flavor combination that I’ve been wanting to experiment with recently has been coconut lime. Considering it’s the height of hot weather in the middle of the summer, this tropical combo has been calling my name. I conveniently picked up a bulk bag of limes and a bulk box of coconut milk on my last Costco run, so I now have the base of everything I need to make it happen! For my breakfast smoothie this morning, I added banana and a little spinach for the health/green factor, and found this to be a delightful blend with the lime and coconut base. The results were sweet and tropical, and the slight tang from the lime juice made my mouth water after every sip. A fun way to start the day, so I wanted to share!
This is a single serve recipe, so feel free to multiply the ingredients for a larger batch size. This would also be great with some rum, maybe swapping out some pineapple for the spinach. Just an idea to make this more of an afternoon cocktail!

Lime Coconut Breakfast Smoothie
- 8 oz unsweetened coconut milk
- Juice of 1 lime
- 1 banana
- 1 cup spinach leaves
- 1 tsp sugar, honey, or agave (optional)
- Add all ingredients to a blender and blend on high for about 1 minute, until fully smooth.
- Pour into cups and enjoy!
