Recipe: Summer Brunch with Burrata, Tomatoes, and Peaches

While summer is winding down and we’re quickly approaching September, we’re reaching one of my favorite times of year where peak summer produce like tomatoes and peaches coexist with emerging fall produce like early apples and winter squash.  Summer’s abundance fades into the next season, and the markets are loaded with fun things to try.  This recipe celebrates the beautiful summer produce still in my garden and in the farmer’s markets, so make this while we still can this year, and save on file for future summers to come!

This isn’t so much of a recipe rather than a delightful combination of summer produce, served simply with some fresh burrata cheese and some toast.  It truly is as simple as slicing up the fruit, drizzling a little olive oil, and sprinkling some salt before enjoying.  This recipe is easy to put together, no cook, and full of amazing, vibrant fruits that keep this meal so fresh and healthy.  This can also be a perfect dinner as well – I just love it for a lazy summer Saturday brunch – so serve any time the mood strikes you!

I kept this recipe as simple as possible, because I love it when the flavors of peak-season produce shine through with only a little salt to enhance them.  However, if you want to dress this up a little more, feel free to add any fresh or dried herbs you like (basil is a perfect choice here, but really, and and all herbs would be great!).  Feel free to add a dash of pesto to your spread, or even a quick drizzle of chili crisp for some heat.  Dress this up however you would like if that’s your scene.  I promise you, the base recipe below is perfect as is, sometimes simple is best!

Recipe down below, photo up top!  This makes enough for one big plate, so scale up as you need.  Also, I would say that this dish is best served freshly prepared, so this recipe is not an ideal candidate for meal prep (although I could easily eat this on repeat all week!).

Recipe: Summer Brunch with Burrata, Tomatoes, and Peaches

Ingredients:

  • 1 large tomato, sliced
    • Sub with 2 medium sized tomatoes, or 8-10 cherry tomatoes
  • 1 peach or nectarine, sliced
  • 1 ball of fresh burrata cheese
  • 1-2 slices of bread, toasted
  • Small pinch of salt
  • Extra Virgin Olive Oil for drizzling

Method:

  1. Toast 1-2 slices of bread using your toasting method of choice (toaster, oven, toaster oven, etc).  Once toasted, set aside while you assemble the rest of the plate.
  2. Cut around the pit of the peach and remove the pit, and slice the peach into slices.  Arrange on a plate.
  3. Remove the stem of the tomato, and slice the tomato into slices.  Arrange those on the plate along with the peaches.
  4. Remove one ball of burrata cheese and drain as much excess water off of the cheese as possible.  Place the burrata on the plate with the tomatoes and peaches.  Using a sharp knife, cut the burrata into ½ inch slices on the plate.
  5. Lightly drizzle the tomatoes and burrata cheese with extra virgin olive oil, and sprinkle the tomatoes with a small pinch of salt.
  6. Serve with the toasted bread and enjoy!
    1. I like to pile up the burrata onto my toast and eat the tomatoes and peaches on the side, but eat it however you like.  Keep everything separate, or build a giant mega-toast with all of the components. Either way, it will all be delicious!
